The higher ATK the better, but that is the same with all your stats. I don't know exactly what attack does, but the higher it is, the harder you hit, and I believe you have a better chance of hitting (as opposed to missing hehe)
Depending on your class, you want certain stats as high as possible. But all classes do well to have the highest AC and ATK possible.
